It also looked like you have the stability slider all the way up if you want it more stable it need be towards the left. If you don't like that, you can go to your options and turn it off, but it's there for a realistic feeling of when you take a sharp turn with a trailer. I don't see a single bug or issue here. I'd actually say SCS did a very good job at nailing down the trailer physics.
