To do so, just follow these Steps right here:

1. Go into C:\ProgramData\TruckersMP\data\shared\ui
2. Search the Image u want to edit (in your case its server_item_1.png) and copy the image
3. Go back into C:\ProgramData\TruckersMP\data and create a new Folder and name it shared_mod
4. in there u create a ui folder and in there you paste the server_item_1.png u copied out of C:\ProgramData\TruckersMP\data\shared\ui
5. Now u can open the picture whit any Photo Edit Software like Photoshop, Pain.net or Gimp
6. Edit it to your likeing and save it whit the size, original name and data type
7. If all done correctly it should change to the Picture you made it into

To do that, you have to do the following: 

1) Go to C:\ProgramData\TruckersMP\data
2) Copy "ats", "ets2" and "shared" folders
3) Paste them in C:\ProgramData\TruckersMP\data
4) Rename them to "ats_mod", "ets2_mod", "shared_mod"
5) Go inside "shared_mod" folder
6) You'll see images that are named in the following manner: "server_item_0", "server_item_0_sel" etc. You have to replace these images.
