They pick a Special Transport job in SP, then by save-editing, they change the trailer to any of the allowed in MP. After that, they can launch MP, load the saved game, and they would be driving in MP with the escort vans (but only they can see them, other players can't see or collide with the vans). You can see in the video that the trailer is just an empty low-bed, not one of the Special Transports DLC.
