I was playing fine yesterday with my wheel but when i tried to play today it wasn't working properly and it feels like i have force feedback on max when turning the actual wheel as it's so stiff even if i turn force feedback off.

Do you have a profile for ETS2 on Logitech Profiler
Yes then look at this options:
Open Logitech Profiler and then Click on Options>Global Device Settings and you should Enable Allow Game To Adjust Settings.



Now you can set you force feedback in game by settings.

i fixed the issue by reinstalling the profiler but it seems i have to install it before playing every time

Start the Logitech Profiler as Admin, maybe then you can save the setting you've made.
