To solve this probleme go to your Windows setting -> Update and Security -> Windows Security -> Open Windows Defender -> Virus & threat Protection -> Turn off real time protection.

 

If you do that your game should not crash.

Try to update the game files, it may be corrupted.
To verify game files go to: Steam > Library > Right-click on Euro Truck Simulator 2 > Open Properties > Local Files > Verify Integrity of Game Files

It should starting verifying your game files
