To get the "@" symbol you can either
-Press and hold Alt and type in 064 in the numpad
-Copy it from outside ETS2 and paste it using Ctrl+V

When you have been standing still for 5-10 minutes you automatically get AFK kicked. You can easily reset the timer though, just move a few meters or type something (e.g. /players) in chat every few minutes.

You can either copy and paste your email address into the box using Ctrl+V, or hold Alt and type in 064 in the numpad to get @.

Or you can copy your email outside the ETS2MP windows and paste it with Ctrl+V into the field.
